The Art of Dry-Aging
Our custom-built aging room is where good beef becomes exceptional. Through precise control of temperature, humidity, and time, we create steaks with unparalleled flavor and tenderness.
Selection
We hand-select only the highest grade USDA Prime beef with exceptional marbling and quality standards.
Temperature Control
Beef is stored at precisely 34-38°F with 85% humidity in our custom-built aging room.
Air Circulation
Controlled air flow allows natural enzymes to break down muscle tissue, concentrating and enhancing flavor.
Perfect Timing
After 28-45 days, the beef reaches peak tenderness and develops its signature nutty, umami-rich flavor.
High-Heat Perfection
After the aging process, our steaks are cooked in custom 1800°F broilers, creating a perfect caramelized crust while keeping the interior tender and juicy. This combination of dry-aging and high-heat cooking creates the signature Prime Reserve experience.
